Haven't blogged in a week... did you miss me ?! Well things were pretty busy. Worked Sunday, Wednesday and Friday nights at the hospital. And had a home inspection that went FOUR hours for my buyer on Thursday night. Had a closing for the Rock Lake house (Halleluiah!) on Friday. Did I mention the TEN plumbing service calls I had to take care of last month as the people moved in early. One of which involved opening up the driveway to fix a broken sewer line- ugggh. If they ahd called one more time to tell me there was water coming from the kitchen ceiling I would have pulled my hair out. But it's sold- so that is wonderful! Now I just have to finish off the Ontario house... which is a little behind. The city is giving us a hard time on the plumbing and electrical items. Got Kitchen, tiling, wood floors, fixtures left to finish.... so pressure to get it done and the lady buying is HIGH maintenance :) But she is sweet. Lukey barfed twice wednesday night... was fine until this morning when he "burped" (as he calls it) three times. Wayne stayed home with him, and sister and I went to church- then stopped by my aforementioned buyer's house to sign off on the home inspection addendum.
Juggling lots.
And praying for grace for each day.
And looking forward to the 26th when we will be CRUISING with Disney ! ! ! ! I won't lie that is keeping me going!

Girl Time
It's been raining for the last 5 days... yuck! I hope we see some sun soon. So in the spirit of cheering up, sweet pea and I headed to the mall for some walking and window shoppin'. What else to cheer us girls up!
Did cave and buy her a bubble romper that was just too cute to let go. And we visited the kids indoor play thing, it was her first time. She just sat there watching for a couple minutes--then "crawled" right in! She wanted to climb high and do it all by herself. I loved her smiles :)
We also went to get her passport photo today. (I was kind of puzzled what to write in when it asked for her "hair" color... heehee) Poppy has been promising Lukey a Disney "Pirate Ship" cruise for a while now. We may have enough points and tax man $ to go next month. I am holding my breath! This may just be the break I need to keep me sane with all the working 24/7 I have been doing. And plus, these vacation junkies are going through withdrawal. Want to come Mom and Dad???

TONE UP Tuesday!
Well with that tease of 80 degree weather yesterday it got me thinking that bathing suit season is right around the corner-- ahhhh! (Aside: I have my heart set on a halter tankini with bottoms that have a mini skirt. If you see a good one like that online- let me know!)
I totally need to tone up before summer... so I hit the Y today. And I was thinking I bet others of you moms out there need to too. Did you know I have Bachelors Degree in Health Fitness... and I was a personal trainer for a few years in Tampa after I graduated college? So I thought- I can share some exercises with my fellow bloggers and we can tone up together, how fun!
So here is this weeks exercise: BABY SQUATS!

** Start by holding your baby close to your chest. Stand with your feet turned outwards and proceed to squat down with your knees pointing outward like your feet. Return to the starting position and repeat 20 times!
Do a set after you wash the dishes; between loads of laudry, or while you are boiling your spaghetti! And if you don't have a baby, don't worry! They will work those buns and thighs either way.

Soccer Baller
First day of Practice today! I tell you the truth, I was geared up and even biting my nails on the way to get him! I decided at 3:00 that his nike shoes were too big, so Sweeters and I did b-line for the Sports Authority and exchanged them for a size 10. Much better. Wouldn't want a big shoe slowin my boy down now. Also got him his cutey Under Armour soccer shirt- gotta be stylin of course! It's a little big but room to grow!

Cheesy Turkey Meatloaf
I don't know about you, but I am always up for trying a new meatloaf recipe. This recipe intrigued me because it was made with turkey and you can finely shred in a little zuchini and carrot that no one knows about! Super healthy. It goes like this:
1.3 lbs. ground turkey
3/4 cup stuffing breadcrumbs
3/4 cup milk
1/2 unpeeled zuchini and raw carrot
1/4 small onion
2 eggs
salt and pepper to taste
9 ouces colby jack cheese cut into 1/2 inch cubes
squirt ketchup
1. Preheat oven to 350
2. Soak 3/4 cup of stuffing bread crumbs in the 3/4 cup milk (I eyeballed it)... while in a big bowl, you finely shread 1/2 zuchinni, 1/2 raw carrot, and 1/4 sweet onion
3. Add the turkey, milk and stuffing crumbs, and eggs then mix together by hand. Season with kosher salt and fresh ground pepper.
4. Fold the colby cubes into the mixture. Transfer all to loaf pan- I prefer my stone one for great baking! Top with ketchup.
5. Bake 1 hour in the preheated oven, to an internal temp of 180 degrees.
Enjoy!! The cheese pockets ooze and are soooo yummy!
