Now I'm the Patient


So I failed my glucose tolerance test last week... which means that I (gulp) have gestational diabetes. Which has sent me through a variety of feelings. Majoring and working in the preventative health field I actually taught classes on diabetes-- but always prided myself on being the picture of health since I have always lived an active lifestyle, ate healthy for the most part, and stayed at a good weight and fitness level. Now I have had hypoglycemia since my high school years-- if I didn't eat, my blood sugar would drop really low and I would feel bad. Don't know if that means my body doesn't process glucose well or what- but here I am 30 weeks pregnant with bad blood sugar.

So I have started counting my carbs, and balancing my meals even better. No sweets or high carb stuff. Keeping a log of everything, doing my exercise, and getting a glucometer today to make sure what I'm doing is working.

It makes me concerned for the future somewhat... will it go away after the birth? Will I have it again later in life now? Will I have a 9 lb. baby, and how am I going to push that out??? Overall it has made me realize my body has weaknesses; that I will never be perfectly healthy forever- until I get to heaven. This has also helped me see pride in my heart when it comes to health. And it has helped me to understand others... like my mom who has celiac disease and can't eat anything with wheat in it. (Good job mom on your diet!)

So I am working through it. Pray for my blood sugar :)

The Best Blueberry Muffins Ever

Don't consider myself a baker, but these muffins are better than you would find in any fine cafe! I think it is the sour cream and wild blueberries that make it special:

2 cups all purpose flour
1 Tbsp baking powder
1/2 tsp salt
1 large egg
1 cup granulated sugar
4 Tbsp butter, melted and cooled slightly
1 1/4 cups sour cream
1 1/2 cups frozen blueberris, preferably wild

Whisk flour, baking powder and salt in medium bowl until combined. Whisk egg in second medium bowl until well-combined and light colored, about 20 seconds. Add sugar and whisk vigorously until thick and homogenous, about 30 sec; add melted butter in 2 or 3 steps, whisking to combine after each addition. Add sour cream in 2 steps, whisking just to combine.

Add frozen blueberries to dry ingredients and gently toss to combine. Add sour cream mixture and fold with rubber spatula until batter comes together and berries are evenly distibuted, 25-30 sec (small spots of flour may remian and batter will be thick). Do not overmix.

Use ice cream scoop or large spoon to drop batter into greased muffin tin. Bake in 350 oven until light golden brown and toothpick inserted into center of muffin comes out clean, 25-30 min, rotating pan front front to back halfway through baking time. Enjoy!

Happy Easter!


5 years ago today, honey, you asked me to marry you... so Easter will always be special to me :)

We had a wonderful Easter together. The day started with a fun package for Luke from Nana and Papa Chambers. Including a book we read together about Easter, a fun color board, and a airplane T-shirt. I put together an Easter basket for Luke- with starburst jelly beans, m&ms, spiderman suckers, and a new Toy Story 2 DVD. He had been interested in Buzz Light Year because he is on his pull-ups at night time. So sad he can't have the peanut butter eggs since he is allergic :( We ate easter eggs for breakfast- my favorite!


A nice church service, then lunch and Egg Hunt at Sharays!



He ate the candy as fast as he could find the eggs! Yum Yum!

Bath Time

Luke has always been a fan of "bath time"... and he recently would like to bring everything but the kitchen sink in with him :) On a usual day you will find: 5 or 6 turtles w/ shells, a toy jet ski, one or two cups, a spatula, a backscratcher, little giraffe, 2 hammers... and lots of bubbles!

Jumpin' Monkey

My niece Haley turned 6 this week and had her party at The Jumpin' Monkey. Luke had been there once before- they have lots of big blow up things to play on, dress up room, truck room... and for $5 that is a great hour of fun!

The kids all had a blast playing; there was music and Luke was dancing to the Stomp song- it was too funny. Everyone thought he was a character. There was a guy that made balloon animals and a bubble maker. All was a hit! Enjoy the pics:

Finally Warm Outside!

It is finally warming up outside. Luke loves to play out in the yard- I took some pics of him this afternoon. Too cute. He left momentarily-- "I'll be right back, I need da scissors". Then proceeds to go inside and get the scissors; and returns outside and starts cutting twigs off the tree excitedly. He wants to be independent.... "you sit down mommy" he tells me. I so enjoy my guy. He also said "baby sister liiikes sticks" :)

I need to get some outdoor stuff for him to play with. Any ideas?

Baked Fish

This is a favorite of Wayne's from Hilton Head Island days... I am proud to say I make it pretty well!

Baked Fish Daufuskie

2 large grouper filets (or other white fish)
3 oz. sliced mushrooms
1/2 oz. bread crumbs

Sauce:
2 oz. Heavy Cream
2 oz. Coarse Grain Mustard
1/2 cup shr. cheddar cheese
1/8 tsp worcestershire sauce

Make sauce by heating cream in heavy skillet. Add ingredients of sauce. Whisk until smooth over medium heat. Brown grouper in pan on med-high, in a pat of unsalted butter one minute each side. Place in lightly greased corningware pan. Pour sauce over fish. Sprinkle with the bread crumbs. Then top with the mushrooms. (I leave them off and Wayne adds at the end) Bake at 350F until fish is done and crumbs are browned- about 12 min.
